  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. Prepare the marinade by mixing olive oil, garlic, thyme, rosemary, orange zest, juice, honey, soy sauce, Dijon mustard, salt, and pepper in a bowl. Rub this marinade all over the chicken.
  2. Marinate the chicken in a zip-top bag or shallow dish in the refrigerator for at least 30 minutes or overnight.
  3. Preheat your oven to 425°F (220°C).
  4. Place the marinated chicken in a roasting pan with quartered onions around it. Pour in the chicken broth.
  5. Roast for about 1 hour and 15 minutes or until the internal temperature reaches at least 165°F (75°C). If needed, tent with foil to prevent over-browning.
  6. Let the chicken rest for about 10 minutes before carving and serving.
