  • 9 Roma tomatoes (sliced lengthwise)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion (diced)
  • 4 garlic cloves (minced)
  • 1 tbsp fresh thyme (minced)
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 1 cup fresh basil (roughly chopped)
  • 1 28 oz. can San Marzano tomatoes (crushed)
  • 1 tbsp sugar
  • 2 cups chicken stock
  • 2/3 cup heavy cream

Instructions

  1. Preheat your oven to 375°F.
  2. Place sliced Roma tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about one hour.
  3. In a large pot, heat olive oil or butter over medium-high heat. Sauté the diced onion until soft.
  4. Add minced garlic, thyme, salt, and pepper; cook for another minute.
  5. Stir in crushed San Marzano tomatoes, fresh basil, and sugar; let simmer for 10 minutes.
  6. Mix in roasted tomatoes and chicken stock; simmer for an additional 30 minutes.
  7. Blend the soup until smooth using an immersion blender.
  8. Stir in heavy cream until combined.
  9. Serve hot, optionally garnished with mini croutons.
