  • 1 head garlic
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 pound pasta (spaghetti or preferred shape)
  • Optional: 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh basil leaves (chopped)
  • 1/2 cup grated cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse and dry cherry tomatoes; place them in a bowl.
  3. Slice top off garlic head, drizzle with olive oil, and season tomatoes with salt, pepper, and optional red pepper flakes.
  4. Arrange tomatoes and garlic on a baking sheet lined with parchment paper.
  5. Roast for 25-30 minutes until tomatoes are blistered and garlic is soft.
  6. Cook pasta according to package instructions; reserve one cup of cooking water before draining.
  7. In a large bowl, squeeze roasted garlic cloves out of their skins and mash with tomatoes.
  8. Mix in the last tablespoon of olive oil and adjust seasoning.
  9. Combine pasta with the tomato-garlic mixture; add reserved pasta water as needed for creaminess.
  10. Fold in chopped basil before serving; top with grated cheese if desired.
