  • ½ pound ground turkey or chicken
  • 1 tablespoon olive oil

  • 3 cups kale (chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • Fresh herbs: thyme, sage, rosemary
  • Salt and pepper to taste
  • Nuts (walnuts or pecans) and feta cheese for topping

Instructions

  1. Preheat oven to 400°F. Prepare a baking sheet with parchment paper.
  2. Halve the acorn squashes and scoop out the seeds. Place cut side down on the baking sheet.
  3. Bake for 20 minutes until fork-tender.
  4. In a skillet over medium heat, cook the ground turkey until browned.
  5. Sauté onions in olive oil until softened, then add kale, garlic, celery, apples, and herbs—cook until vegetables are tender.
  6. Scoop out some flesh from the baked squash and mix it into the filling.
  7. Stuff each squash half with the mixture, topping with nuts and feta.
  8. Bake again for 15 minutes; then broil for an additional 5 minutes to brown the topping.
