  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 3 tablespoons chopped fresh chives
  • 1 cup shredded cheddar cheese
  • 1/2 cup unsalted butter (frozen)
  • 2/3 cup cold buttermilk
  • 1 large egg (separated)
  • 3/4 cup finely chopped cooked chicken

Instructions

  1. Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, garlic powder, salt, and pepper.
  3. Stir in chopped chives and shredded cheese.
  4. Grate the frozen butter into the mixture until it resembles pea-sized crumbs.
  5. In another bowl, whisk together buttermilk and egg yolk; then fold into the dry mix along with the chopped chicken until just combined.
  6. On a floured surface, form the dough into an eight-inch disc and cut into wedges.
  7. Brush tops with egg white mixed with buttermilk; sprinkle with sea salt if desired.
  8. Chill scones for at least 15 minutes before baking for better texture.
  9. Bake for about 22-25 minutes until golden brown. Let cool slightly before serving.
