  • 2 lbs large shrimp (peeled and deveined)
  • 20 oz refrigerated three cheese tortellini
  • 1 tbsp olive or grapeseed oil
  • 1/3 cup dry white apple vinegar
  • 8 tbsp unsalted butter
  • 2 tbsp minced garlic
  • 6 oz chicken stock
  • 4 oz cream cheese (softened)
  • 2 cups heavy cream
  • 5 oz fresh baby spinach
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Season shrimp with all-purpose seasoning.
  2. In a skillet over medium-high heat, sear the shrimp in oil for about 1-2 minutes on each side until pink. Remove from skillet.
  3. Lower heat and deglaze skillet with apple vinegar. Add butter and garlic; cook until fragrant.
  4. Sprinkle flour into the mixture, stirring until dissolved.
  5. Stir in chicken stock and cream cheese until smooth, then add heavy cream and dried basil; simmer for 5-7 minutes.
  6. Cook tortellini according to package instructions and drain.
  7. Add spinach to the sauce and stir until wilted. Combine with cooked tortellini and shrimp before serving.
