  • 1/2 cup Kalamata olives, pitted and chopped
  • 1/4 cup green olives, pitted and chopped
  • 2 tablespoons capers, drained
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Blanch the cauliflower in boiling salted water for 2-3 minutes until slightly tender but still crisp. Drain and rinse under cold water; pat dry.
  2. In a bowl, whisk together olive oil, red apple vinegar, lemon juice, salt, and pepper.
  3. In a large bowl, combine blanched cauliflower with olives, capers, red onion, cherry tomatoes, and parsley.
