  • 4 large organic sweet potatoes, peeled and cubed
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube the sweet potatoes, then toss them with olive oil, cinnamon, nutmeg, and salt.
  2. Spread sweet potatoes on a baking sheet and roast for 30-35 minutes until tender.
  3. In a large bowl, combine roasted sweet potatoes with almond milk, vanilla extract, butter, brown sugar, and maple syrup. Mash until smooth but chunky.
  4. Fold in soaked raisins and vegan marshmallows.
  5. Transfer to a greased baking dish, top with raw pecans, drizzle with additional maple syrup if desired. Bake at 350°F (175°C) for about 45 minutes until bubbly and golden.
  6. Let cool slightly before serving warm.
