  • 4 large organic sweet potatoes
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Peel and cube sweet potatoes, then boil them in water until fork-tender (15-20 minutes). Drain.
  2. In the pot, combine sweet potatoes with olive oil, almond milk, vanilla extract, butter, sugars, spices, and mash until smooth.
  3. Transfer to a greased baking dish and layer with raisins, marshmallows, and pecans.
  4. Bake at 350°F (175°C) for about 45 minutes until golden brown.
  5. Drizzle with additional maple syrup before serving.
