  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 4 ears of corn, husks and silk removed
  • 2 tbsp butter, melted
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 tsp chili powder (optional, for extra heat)
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 avocado, diced
  • Hot sauce, to taste (optional)
  • Lime wedges, for serving

Instructions

  1. In a bowl, toss cubed chicken with olive oil and spices until well-coated.
  2. Heat a skillet over medium-high heat and cook chicken until golden brown.
  3. Prepare the corn by grilling or boiling; then mix kernels with mayonnaise, sour cream, cilantro, lime juice, and optional chili powder.
  4. Cook rice according to package instructions.
  5. Assemble bowls with rice as the base, topped with chicken, street corn mixture, black beans, and diced avocado.
