- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste
- 4 ears of corn, husks and silk removed
- 2 tbsp butter, melted
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup crumbled cotija cheese
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1/4 tsp chili powder (optional, for extra heat)
- 1 cup long-grain white rice
- 2 cups water
- 1 tbsp olive oil
- 1/2 tsp salt
- 1 can (15 ounces) black beans, rinsed and drained
- 1 avocado, diced
- Hot sauce, to taste (optional)
- Lime wedges, for serving
- In a bowl, toss cubed chicken with olive oil and spices until well-coated.
- Heat a skillet over medium-high heat and cook chicken until golden brown.
