  • 2 cups rotisserie chicken (chopped)
  • 1/4 cup cilantro (minced)
  • 3 green onions (sliced)
  • 1 jalapeno (seeded and diced)
  • 1/4 red onion (diced)
  • 1/2 red bell pepper (seeded and diced)
  • 15.25 oz can sweet corn (drained)
  • 1/2 cup plain Greek yogurt (2% or higher for creaminess)
  • 1/3 cup mayonnaise
  • 1 lime (juice and zest of)
  • 1 clove garlic (finely minced or grated)
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp each salt and freshly cracked pepper

Instructions

  1. Prepare the Cucumbers: Slice cucumbers and pat dry with paper towels to remove excess moisture.
  2. Make the Dressing: In a bowl, whisk together Greek yogurt, mayonnaise, lime juice and zest, minced garlic, chili powder, paprika, cumin, salt, and pepper until smooth.
  3. Combine Ingredients: In a large bowl, mix dried cucumbers with corn, chopped chicken, cilantro, green onions, jalapeno, red onion, and red bell pepper.
  4. Add Dressing: Pour most of the dressing over the salad mixture and fold gently until well coated.
  5. Chill and Serve: Refrigerate for at least 30 minutes to enhance flavors before serving cold.
