  • 3 large eggs
  • 2 tbsp unsalted butter (melted)
  • 0.5 cup all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup unsalted butter (cold and cut into small pieces)
  • 0.25 cup granulated sugar (for extra sweetness)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add egg and vanilla; mix well.
  3. Gradually incorporate flour, baking powder, and salt until combined. Press half of this mixture into the prepared pan as the cookie base.
  4. In another bowl, whisk together fresh lemon juice, granulated sugar, flour, salt, eggs, and melted butter until smooth. Pour over the cookie base.
  5. For the crumble topping, mix remaining flour, sugar, and cold butter until crumbly; sprinkle over the filling.
  6. Bake for 40-45 minutes until golden brown on top. Allow to cool completely before slicing.
