  • ½ tsp salt
  • 6 tbsp unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 large egg
  • ½ cup buttermilk
  • 2 tsp vanilla extract
  • 1 tbsp sparkling sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, cream the softened butter and sugar until light and fluffy. Add the egg and vanilla extract; mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture alternately with buttermilk until just combined.
  5. Pour the batter into the prepared pan and top with peach slices. Optionally sprinkle with sparkling sugar.
  6. Bake for 50–60 minutes or until a toothpick inserted comes out clean. Let cool for about 10 minutes before transferring to a wire rack.
