  • 3 medium shallots (halved and thinly sliced)
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear (diced)
  • 1 lemon (zested and juiced)
  • ½ cup roughly chopped parsley
  • Freshly ground black pepper (to taste)

Instructions

  1. Prep the pear by peeling, slicing, and dicing it into small pieces. Toss with lemon juice to prevent browning.
  2. In a large skillet over medium heat, cook the diced turkey strips until golden brown. Transfer to a paper towel-lined plate.
  3. In the same skillet, sauté shallots until softened, then stir in the Dijon mustard.
  4. Add peas and diced pears to the skillet; gently stir for about five minutes until heated through.
  5. Remove from heat and fold in half of the turkey strips along with parsley and black pepper.
  6. Serve in a large bowl topped with remaining turkey strips and lemon zest.
