  • 1 cup toffee bits

  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually add the dry mixture to the wet ingredients until just combined.
  5. Fold in the toffee bits gently.
  6. Divide the dough into two logs (about 2 inches in diameter), wrap in plastic wrap, and chill for at least 2 hours.
  7. Preheat your oven to 350°F (175°C). Slice chilled logs into 1/4-inch rounds.
  8. Place on a parchment-lined baking sheet and bake for 10–12 minutes or until edges are golden.
  9. Allow cooling on the baking sheet for a few minutes before transferring them to wire racks.
