  • 1/2 cup finely minced onion

  • 1/2 cup grated parmesan
  • 1 large whole egg plus 1 yolk
  • 1 1/2 pounds ground turkey
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil or avocado oil, for frying
  • 2 tablespoons ghee or unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup finely minced onion
  • 6 cloves garlic, pressed
  • 2 teaspoons Italian seasoning
  • 15 ounces organic pumpkin puree
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped fresh sage

Instructions

  1. In a large bowl, combine breadcrumbs and milk; let them soak for 2-3 minutes. Mix in minced onion, garlic, herbs, Italian seasoning, parmesan cheese, egg, and yolk until well combined.
  2. Gently fold in ground turkey with salt and pepper until just mixed; avoid overworking.
  3. Chill the mixture in the freezer for 20-25 minutes to firm up.
  4. Shape meatballs and sear them in a hot skillet until golden brown.
  5. In the same skillet, sauté onions and garlic; add pumpkin puree, chicken stock, salt, and pepper to create the sauce.
  6. Stir in cream and parmesan, then gently mix in cooked meatballs.
