  2. Allow to boil without stirring until it reaches 245°F (118°C) on a candy thermometer.
  3. Remove from heat and stir in vanilla chocolate chips until melted and smooth.
  4. Mix in vegan marshmallow crème and vanilla extract until well combined.
  5. Fold in chopped pecans gently.
  6. Drop rounded tablespoons of the mixture onto a parchment-lined baking sheet; ensure space between mounds.
