  • 1 3/4 cups apple juice
  • 2 tablespoons apple cider vinegar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla bean paste
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon salt

Instructions

  1. Core and chop the apples into large chunks and place them in a large pot with apple juice and apple cider vinegar. Bring to a boil, then reduce heat and simmer covered for about 30 minutes until soft.
  2. Stir in brown sugar, vanilla bean paste, cinnamon, nutmeg, cloves, and salt until fully combined.
  3. Use an immersion blender to puree the mixture until smooth (or transfer to a standing blender).
  4. Return the blended mixture to the pot and cook uncovered over medium heat for an additional 30-45 minutes, stirring frequently until thickened.
