  • 2 tablespoons oil (or water for oil-free)
  • 1 large onion, diced
  • 3 large carrots, cut into chunky pieces
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 1 medium rutabaga or turnip, cut into chunky pieces
  • 4 large potatoes, cut into chunks
  • ¼ head green cabbage, shredded
  • 4 cups vegetable stock
  • ¼ cup soy sauce (or Tamari)
  • Optional: 9 oz vegan beef or portobello mushrooms

Instructions

  1. Heat oil in a large pot over high heat. Sear vegan beef or mushrooms until golden; set aside.
  2. Reduce heat to medium and sweat down onions, carrots, and celery until softened. Add garlic and cook briefly.
  3. Stir in flour until combined, then add non-alcoholic stout while stirring.
  4. Add rutabaga, potatoes, cabbage, vegetable stock, soy sauce, salt, pepper, sugar, and herbs; stir well.
  5. Bring to a simmer and cook uncovered for about 45-50 minutes until potatoes are soft.
  6. Return seared protein to the pot during the last ten minutes of cooking.
  7. Serve hot with crusty bread or rice.
