- 16 oz mixed nuts (cashews, almonds, pecans, walnuts)
- 1 large egg white
- 1/2 cup honey
- 1 1/2 tsp Kosher salt
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp chili powder
- 1/2 tsp red pepper flakes
- 1/2 tsp cayenne pepper
- 1/4 tsp cracked black pepper
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
- Whip egg white in a bowl until frothy. Add mixed nuts and coat well.
- Microwave honey if firm, then mix in spices and pour over nuts. Stir to combine thoroughly.
- Spread nut mixture on baking sheet and roast for 45-60 minutes, stirring every 15 minutes until golden brown.
- Allow cooling before breaking apart into chunks.
