  • 1 ½ cups chopped walnuts

Instructions

  1. Preheat your oven to 350°F and grease two 8×4-inch loaf pans.
  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another large bowl, mix grated zucchini, vegetable oil, eggs, and vanilla extract until well combined.
  4. Gently fold in the dry ingredients and walnuts until just combined—do not overmix!
  5. Divide the batter into prepared pans and bake for 50-60 minutes or until a toothpick comes out clean.
  6. Cool in pans for about 15 minutes before transferring to a wire rack to cool completely.
