  • 1/4 cup (60 ml) water
  • 1/4 cup (60 ml) freshly squeezed lemon juice
  • 1.8 kg (4 lb) granulated sugar

  1. Wash apricots and cut them in half to remove pits; chop into small pieces.
  2. In a large pot, combine apricots, water, and lemon juice; bring to a boil over medium heat.
  3. Reduce heat and simmer for about 10 minutes until softened.
  4. Gradually add sugar, stirring continuously until dissolved.
  5. Test for doneness using a food thermometer (should reach at least 105°C / 220°F) or perform a plate test.
  6. Ladle hot jam into sterilized jars, leaving 1/4 inch space at the top before sealing.
  7. Cool jars at room temperature before storing in a cool, dark place.
