  • 1 3/4 cups flour (sifted)
  • 1/2 tsp lemon zest
  • 1/4 tsp salt
  • 8 oz cream cheese (softened)
  • 1 cup butter (softened)
  • 1 jar quality apricot preserves
  • Egg whites (for brushing)
  • Granulated sugar (for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and cream cheese until smooth.
  2. In another bowl, sift together the flour and salt; stir in the lemon zest. Gradually add this to the creamy mixture using a wooden spoon until combined.
  3. Chill the dough for at least 30 minutes. Once chilled, roll out the dough on a floured surface to about 1/8 inch thick and cut into 3-inch squares.
  4. Place approximately 1 teaspoon of apricot preserves in the center of each square. Brush edges with egg whites, fold over corners to seal, and sprinkle lightly with sugar.
  5. Bake on an ungreased cookie sheet for about 25 minutes or until golden brown. Cool on a wire rack before serving.
