  • 1 1/2 cups cold unsalted butter, cubed
  • 1 large egg, beaten
  • 2 cups dried apricots, chopped
  • 1/2 cup granulated sugar (for filling)
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the apricot filling by simmering chopped dried apricots with water and sugar until tender. Stir in lemon juice and cool.
  2. Make the shortbread crust by mixing flour, sugar, baking powder, and salt; cut in cold butter until crumbly. Combine with beaten egg and vanilla until just mixed.
  3. Press most of the dough into a greased baking pan; top with cooled apricot filling and crumble remaining dough on top.
  4. Bake at 375°F for 30–35 minutes until golden brown. Cool completely before cutting.
