  • 2 jars (12-14 oz each) quartered marinated artichoke hearts
  • 34 ounces arugula
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup black olives
  • ¼ cup shaved parmesan cheese
  • ¼ cup extra virgin olive oil
  • 2 tablespoons vinegar (white wine preferred)
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup (or honey)
  • Dried oregano & basil
  • Garlic powder, salt, and black pepper

Instructions

  1. Start by arranging the arugula on a large serving platter.
  2. Drain the artichoke hearts and scatter them over the arugula.
  3. Add halved cherry tomatoes, black olives, and thinly sliced red onion on top.
  4. In a jar, combine olive oil, vinegar, lemon juice, maple syrup, oregano, basil, garlic powder, salt, and pepper. Shake well to mix.
  5. Drizzle half of the dressing over the salad before serving; reserve the rest for guests.
  6. Top with shaved parmesan cheese before enjoying!
