Baguette pizzas are the ultimate quick and easy meal that brings a fresh twist to traditional pizza. With just a baguette as a base, you can create delightful mini pizzas tailored to your taste preferences. Perfect for game nights, family dinners, or cozy evenings at home, these customizable treats can be topped with anything from zesty buffalo chicken to savory caramelized shallots and creamy goat cheese.   • 1 baguette (24-inch)
  • 2 c. shredded rotisserie chicken
  • 2/3 c. Buffalo-style hot sauce
  • 1/4 c. ranch dressing, plus more for topping
  • 6 oz. mozzarella, coarsely grated
  • 1/2 c. crumbled blue cheese
  • 2 scallions, thinly sliced
  • Chopped cilantro, for topping
  • 1/4 c. olive oil
  • 4 shallots, thinly sliced
  • 4 cloves garlic, finely chopped
  • Kosher salt
  • Pepper
  • 1 c. whole milk ricotta
  • 4 oz. mozzarella, coarsely grated
  • 1/2 c. goat cheese, crumbled
  • 2 tsp. fresh thyme leaves
  • 1/4 c. walnuts, toasted and chopped
  • Honey, for drizzling
  • 1 (15-ounce) can whole peeled tomatoes, drained
  • 1 tbsp. fresh oregano, chopped
  • 1 large clove garlic, finely grated
  • 2 anchovy fillets, finely chopped
  • 2 oz. pepperoni, thinly sliced
  • 1/3 c. pickled pepperoncini peppers, thinly sliced

Instructions

  1. Preheat your oven's broiler. Split the baguette lengthwise and place it cut-side up on a baking sheet. Broil for 2-3 minutes until lightly golden.
  2. For the buffalo chicken version, mix shredded chicken with hot sauce and spread ranch dressing on the baguette. Top with mozzarella, chicken mixture, and blue cheese.
  3. Bake at 375°F for 3-5 minutes until cheese melts.
  4. For caramelized shallots, cook sliced shallots and garlic in olive oil until golden brown. Spread ricotta on the baguette, followed by mozzarella and shallot mixture before baking again.
  5. For pepperoni, crush tomatoes with oregano and garlic, then spread sauce on the baguette topped with cheese and pepperoni before final baking.
