  • 1 pkg. pork tenderloin, trimmed (comes with 2 pieces, 22 ½ lbs. total)
  • 2 shallots, peeled, roughly chopped
  • 1/4 cup lemongrass, from white inner part of 3 stalks
  • 1/3 cup fish sauce
  • 3 tablespoons oyster sauce
  • 3 tablespoons lime juice
  • 3 tablespoons pure maple syrup
  • 2 tablespoons brown sugar
  • 1 inch ginger, peeled (or 1 tsp ground)
  • 5 cloves garlic, peeled (or 1 teaspoon powder)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon vegetable or canola oil
  • 1 tablespoon Asian chili sauce (like Sambal Oelek or Sriracha)
  • 1 teaspoon EACH ground coriander, Chinese five spice
  • ½ cup rice vinegar
  • ½ cup water
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 cup matchstick carrots (23 carrots)
  • 1 cup daikon cut into matchsticks (may substitute radishes)
  • 3/4 cup mayonnaise
  • 13 teaspoons Asian chili sauce (like Sambal Oelek or Sriracha)
  • 68 soft French baguettes, about 8 inches each
  • Pâté, optional
  • 1 English cucumber, thinly sliced lengthwise
  • 46 jalapeños, thinly sliced
  • 1 cup chopped fresh cilantro leaves
  • Maggi seasoning, optional

Instructions

  1. Prepare the marinade by mixing fish sauce, oyster sauce, lime juice, maple syrup, brown sugar, ginger, garlic, sesame oil, vegetable oil, and chili sauce in a bowl.
  2. Marinate the trimmed pork tenderloin in the mixture for at least one hour or overnight.
  3. Pickle matchstick carrots and daikon in a separate bowl with rice vinegar, water, sugar, and salt for at least one hour.
  4. Cook the marinated pork in a grill pan over medium-high heat for 4–5 minutes on each side until browned and cooked through.
  5. Assemble your Banh Mi by spreading mayonnaise mixed with chili sauce on the baguette and layering with sliced pork, pickled vegetables, cucumbers, jalapeños, and cilantro.
