  • 1/4 cup lime juice
  • 3 tablespoons olive oil
  • 34 garlic cloves (minced)
  • 1 tablespoon achiote powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 2 teaspoons sea salt
  • 1/2 teaspoon ground black pepper
  • 3 pounds chicken thighs (or legs/breasts)

Instructions

  1. In a mixing bowl, whisk together orange juice, lime juice, olive oil, garlic, achiote powder, cumin, coriander, oregano, salt, and black pepper until well combined.
  2. Place the chicken in a resealable bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat your grill to medium-high heat or oven to 425°F (220°C).
  4. Remove the chicken from the marinade and discard excess marinade. Grill for about 6–8 minutes on each side until cooked through (internal temperature should reach 165°F). If baking, cook for approximately 40 minutes.
  5. Allow the chicken to rest for a few minutes before slicing. Serve with lime wedges and chopped cilantro.
