  • 1 lb elbow macaroni
  • 1/2 cup shallots (finely minced)
  • 1 cup red bell pepper (finely chopped)
  • 1 cup celery (finely chopped)
  • 3 tbsp Creole or Dijon mustard
  • 1 1/2 cups mayonnaise
  • Kosher salt
  • 1 tsp smoked paprika
  • 1 tsp Cajun seasoning
  • 1 tsp freshly ground black pepper
  • 3 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • 1 tsp hot sauce (ie, Tobasco, Crystals)
  • 1/4 cup fresh parsley (chopped, for garnish)
  • 2 tbsp good-quality olive oil (divided)

Instructions

  1. Cook elbow macaroni in salted boiling water for about 9 minutes until tender. Drain and rinse under cold water.
  2. In a large mixing bowl, combine cooled pasta with 1 tablespoon olive oil.
  3. In another bowl, mix shallots, red bell pepper, celery, Cajun seasoning, smoked paprika, mustard, mayonnaise, salt, black pepper, vinegar, lemon juice, and hot sauce. Adjust consistency with water if needed.
  4. Combine the pasta with the dressing mixture until well coated.
  5. Garnish with freshly chopped parsley before serving.
