  • 8 ounces (227 grams) semisweet baking chocolate, chopped
  • 1 cup (200 grams) granulated sugar
  • 2/3 cup (133 grams) dark brown sugar
  • 3/4 cup (95 grams) all-purpose flour
  • 1 cup (85 grams) unsweetened natural cocoa powder
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 5 large eggs, at room temperature
  • 1/2 cup fresh vegetable oil
  • 1 teaspoon vanilla extract
  • 2 sticks (227 grams) unsalted butter, at room temperature
  • 1 cup (270 grams) creamy conventional peanut butter
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt
  • 2 1/2 cups (313 grams) powdered sugar, sifted
  • 4 ounces (113 grams) semisweet or bittersweet chocolate, finely chopped
  • 1/2 cup heavy cream
  • Chopped peanut butter cups (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare three 9-inch round baking pans by greasing them.
  2. Melt 1 stick of unsalted butter with 8 ounces of semisweet chocolate over low heat until smooth.
  3. In a large bowl, mix granulated and dark brown sugars with the melted chocolate mixture. Add 5 eggs one at a time.
  4. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually combine with wet ingredients until just mixed.
  5. Divide batter among prepared pans and bake for about 25 minutes or until a toothpick comes out clean. Cool completely.
  6. For frosting, beat room temperature unsalted butter and peanut butter until smooth; gradually add sifted powdered sugar.
  7. Assemble the cake by layering brownies with frosting in between; frost the top and sides.
  8. Make ganache by heating heavy cream then mixing it with chopped chocolate until smooth; pour over frosted cake.
