  • 3/4 cup natural unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter (room temperature)
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Additional sugar for rolling

Instructions

  1. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. In a bowl, mix flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
  3. Cream together butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Gradually add dry ingredients to wet mixture, mixing until a thick dough forms.
  6. Roll dough into balls (about 1½ tablespoons each), coat in sugar, and place on the baking sheet.
  7. Slightly flatten each ball with the bottom of a glass.
  8. Bake for 7–8 minutes or until puffy; they will flatten as they cool.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
