  • 1 tablespoon red wine vinegar
  • 2 tablespoons olive oil
  • 1 baguette, sliced
  • Extra virgin olive oil
  • ½ cup balsamic vinegar
  • 3 tablespoons brown sugar
  • Parmesan Cheese (optional)

Instructions

  1. Prepare the tomato mixture by combining diced tomatoes and salt in a mixing bowl; let sit for 20-30 minutes to draw out moisture. Drain excess juice and mix in garlic, basil, pepper, vinegar, and olive oil. Let rest at room temperature for another 20-30 minutes.
  2. Preheat oven to 400°F (200°C). Brush baguette slices with olive oil and arrange on a baking sheet lined with parchment paper. Toast for about 5 minutes; flip and toast for an additional 2-3 minutes until golden brown.
  3. For the balsamic glaze, simmer balsamic vinegar and brown sugar in a saucepan over medium heat for about 10 minutes until slightly thickened; let cool.
  4. Assemble by spooning tomato mixture onto each toasted baguette slice and drizzle with balsamic glaze before serving.
