  • 1 ½ cups dried Israeli couscous
  • 1 medium English cucumber (diced)
  • 1 large tomato (diced)
  • ½ cup coarsely chopped fresh herbs (parsley, cilantro, basil, dill, or mint)
  • ¼ cup golden raisins
  • ¼ cup toasted walnuts (chopped)
  • ¼ cup extra-virgin olive oil
  • 1 teaspoon Dijon mustard
  • ½ teaspoon honey
  • Zest of 1 lemon
  • 2 to 4 tablespoons fresh lemon juice (to taste)
  • Salt and freshly ground black pepper

Instructions

  1. In a large saucepan, bring water to a rolling boil. Season with salt and add the couscous. Cook for 8 to 10 minutes until tender yet chewy. Drain and set aside.
  2. In a mixing bowl, whisk together olive oil, Dijon mustard, honey, lemon zest, lemon juice, salt (½ teaspoon), and black pepper (¼ teaspoon).
  3. Add the cooked couscous to the bowl and stir until coated with the dressing.
  4. Gently fold in diced cucumber, tomato, fresh herbs, walnuts, and raisins. Adjust seasoning if needed.
  5. Serve immediately or chill for about an hour to enhance flavors.
