  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 4 oz cream cheese (softened)
  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin pan with liners or grease it lightly.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, mash the bananas until smooth. Add granulated sugar and brown sugar; mix well. Beat in the egg, then stir in the vegetable oil and vanilla extract.
  4. Gradually add the dry ingredients until just combined. Gently fold in chopped pecans if desired.
  5. In another bowl, beat cream cheese until smooth; mix in sugar, egg yolk, and vanilla extract. If needed, add milk for a smoother consistency.
  6. Fill muffin tins 3/4 full with banana batter and top each with cream cheese mixture; swirl gently with a toothpick.
  7. Bake for 16-18 minutes or until a toothpick comes out clean.
