  • 3 cups shredded chicken (rotisserie or cooked chicken breast)
  • 4 cups cauliflower rice
  • 8 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese (divided)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • 1 tbsp olive oil
  • 1 cup chopped spinach, broccoli florets, or sliced mushrooms

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté cauliflower rice for 5–7 minutes until tender.
  3. In a mixing bowl, combine shredded chicken, sautéed cauliflower rice, softened cream cheese, half of the cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Add any desired vegetables.
  4. Spread the mixture into a greased 9×13-inch baking dish and top with remaining cheddar cheese.
  5. Bake uncovered for 20–25 minutes until bubbly and golden brown.
