  • 12 oz spicy Italian chicken sausage (sliced)
  • 6 cloves garlic (minced)
  • 1 cup dry orzo
  • 2 cups low sodium chicken broth
  • 1/4 cup full-fat coconut milk (or heavy cream)
  • 2 cups baby spinach leaves
  • 1/2 cup grated parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sliced chicken sausage and cook until browned (about 6–7 minutes). Stir in minced garlic for another 30 seconds.
  2. Add dry orzo to the skillet; toast for about 60 seconds. Pour in chicken broth and mix in coconut milk, soy sauce, onion powder, red pepper flakes, black pepper, salt, and thyme.
  3. Bring to a boil, then reduce heat, cover, and simmer for about 10–12 minutes until orzo is tender and most liquid is absorbed.
  4. Stir in baby spinach until wilted and mix in parmesan cheese. Adjust seasoning as needed.
