  • 0.25 cups fresh blackberry puree
  • 1 cup buttermilk
  • Purple or red food coloring (optional)
  • 2 cups fresh or frozen blackberries (for topping)
  • 0.25 cups granulated sugar (for topping)
  • 1 tbsp lemon juice (for topping)
  • 1 tbsp cornstarch (for topping)
  • 2 tbsp water (for topping)
  • 1 cup heavy cream (for ganache)
  • 1.5 cups semi-sweet or dark chocolate (chopped)
  • 1 tbsp unsalted butter (optional for ganache)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round baking pans.
  2. In one bowl, mix flour, sugars, cocoa powders, baking powder, baking soda, and salt.
  3. In another bowl, cream butter until fluffy; add sugar gradually. Mix in eggs and vanilla.
  4. Combine wet ingredients: coconut oil, blackberry puree, and buttermilk.
  5. Gradually mix dry ingredients into wet ingredients without overmixing.
  6. Pour batter evenly into prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  7. While baking, prepare blackberry topping by cooking blackberries with sugar, lemon juice, cornstarch, and water until thickened.
  8. For the ganache, heat heavy cream until boiling; pour over chopped chocolate and stir until smooth.
  9. After cooling the cakes completely, layer with blackberry topping and cover with ganache.
