  • 1 cup Kalamata olives
  • 1 cup feta cheese
  • 1 cup cherry tomatoes
  • 1 large cucumber
  • 1 medium red onion
  • Fresh parsley
  • Fresh dill
  • 1/3 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder

Instructions

  1. Boil baby potatoes in salted water until fork-tender (15–20 minutes). Drain and cool.
  2. While cooling, chop cucumbers, tomatoes, onion, parsley, and dill; combine in a mixing bowl.
  3. In another bowl, whisk together olive oil, vinegar, mustard, oregano, and garlic powder.
  4. Cut cooled potatoes into halves/quarters and add to the vegetable mixture along with olives and feta.
