  • 3 tablespoons soy sauce
  • 1 tablespoon mirin or rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, thinly sliced
  • 1 inch piece fresh ginger, sliced
  • 4 packs ramen noodles (about 3 oz each, seasoning packets discarded)
  • 16 frozen or fresh dumplings (pork, chicken, or vegetable)
  • 4 large eggs
  • 4 cups fresh greens (baby spinach, bok choy, or mixed Asian greens)
  • 1 cup sliced mushrooms
  • 1 cup shredded carrots
  • 2 stalks green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • 1 teaspoon chili oil or chili flakes

Instructions

  1. Boil eggs in a medium pot for 6-7 minutes. Transfer to an ice bath to cool before peeling.
  2. In a large pot, simmer broth with water, soy sauce, sesame oil, garlic, and ginger.
  3. Cook dumplings in the simmering broth according to package directions.
  4. Add mushrooms and carrots during the last few minutes of cooking.
  5. Stir in ramen noodles and fresh greens; cook until tender.
  6. Serve in bowls topped with halved soft-boiled eggs and desired garnishes.
