  • 5 thinly sliced onions
  • 3 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup beef broth
  • 1/2 baguette (for topping)
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Oregano
  • 1 tsp Sugar
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1/2 tsp nutmeg
  • Fresh Parsley (chopped)

Instructions

  1. Slice onions thinly and caramelize them in olive oil over medium heat for 30–40 minutes until golden brown.
  2. Add beef broth to the pan if onions start sticking; simmer for an additional 10 minutes.
  3. In the same skillet, prepare a béchamel sauce by whisking flour into melted butter, then gradually adding heavy cream until thickened.
  4. Stir in caramelized onions and season with salt, pepper, parsley, and Parmesan cheese.
  5. Cook cavatappi pasta until just under al dente; drain.
  6. Mix pasta with béchamel sauce and transfer to a baking dish.
  7. Top with remaining onions and breadcrumbs; bake at 350°F (175°C) for 10–15 minutes until golden.
