  • 8 sheets of rice paper
  • Handful of mint leaves
  • Handful of strawberries
  • 2 kiwis
  • 1 apple
  • 1 mango
  • ½ block cream cheese
  • 1 cup heavy cream (125g), softened
  • ½ lime (juiced)
  • 12 tbsp honey

Instructions

  1. Slice all fruits into thin strips.
  2. Briefly soak each rice paper sheet in water until pliable.
  3. Layer the sliced fruits and mint leaves on the rice paper.
  4. Roll tightly, folding in the ends as you go.
  5. For the dip, whip heavy cream until soft peaks form, then blend with cream cheese, lime juice, and honey until smooth.
  6. Serve rolls chilled with the creamy dip on the side.
