  • 4 Roma tomatoes
  • ½ seedless English cucumber
  • 1 ½ cups crumbled feta cheese
  • ½ cup chopped green onion
  • Juice of 1 lemon
  • ¼ cup extra virgin olive oil
  • 1 tsp red wine vinegar
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp dried oregano
  • ⅛ tsp dried dill
  • ½ tsp dried basil

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the baguette into ½ inch thick pieces and arrange them on a baking sheet.
  2. Drizzle olive oil over the slices and bake for 5–7 minutes until golden brown and crispy.
  3. While the bread is toasting, dice the Roma tomatoes and cucumber. Combine them with chopped green onions in a mixing bowl.
  4. Add crumbled feta, lemon juice, red wine vinegar, garlic powder, salt, pepper, oregano, dill, and basil to the bowl. Mix gently until well combined.
