Homemade Giardiniera, or pickled vegetables, is a deliciously zesty condiment that enhances any meal with its vibrant colors and bold flavors. This Italian-inspired relish features a delightful mix of crunchy vegetables, including cauliflower, carrots, and bell peppers, all marinated in a tangy brine.

Ingredients

  • 3 cups small bite-sized cauliflower florets
  • 1 1/2 cups sliced carrots
  • 1 1/2 cups sliced celery
  • 1 1/2 cups sliced red bell pepper
  • 1 cup pitted green olives
  • 4 tablespoons olive oil (divided)
  • 4 cloves garlic (peeled and sliced in half, divided)
  • 2 Serrano chile peppers (sliced in half, divided)
  • 4 bay leaves (divided)
  • 2 teaspoons dried oregano (divided)
  • 1 teaspoon celery seeds (divided)
  • 1 teaspoon fennel seeds (divided)
  • 1 teaspoon yellow mustard seeds (divided)
  • 1/2 teaspoon coriander seeds (divided)
  • 1/4 teaspoon black peppercorns (divided)
  • 3 cups water
  • 3 cups white wine vinegar
  • 2 tablespoons salt
  • 2 tablespoons granulated sugar

Instructions

  1. Prep all vegetables by chopping them into bite-sized pieces.
  2. In four pint jars, add olive oil, garlic halves, Serrano peppers, bay leaves, oregano, celery seeds, fennel seeds, mustard seeds, coriander seeds, and black peppercorns.
  3. Fill the jars with chopped vegetables until they reach the top.
  4. In a medium saucepan over high heat, combine water, vinegar, salt, and sugar; bring to a boil. Pour the boiling brine into each jar until fully covered.
  5. Let the jars cool at room temperature before sealing and refrigerating for 36-48 hours.
