Ingredients

  • Olive oil
  • Yellow onions
  • Garlic
  • Ground turmeric
  • Seven spice
  • Boneless, skinless chicken breasts (or thighs)
  • Low sodium chicken stock
  • Red lentils
  • Fresh herbs (baby spinach, parsley, cilantro, dill, mint)
  • Lemon wedges

Instructions

  1. In a large pot over medium heat, sauté sliced onions in olive oil until golden brown (16–20 minutes). Reserve some for garnish.
  2. Add minced garlic and cook for another minute before adding spices: turmeric, seven spice, kosher salt, black pepper.
  3. Bring the mixture to a boil and add chicken breasts. Reduce heat to low; cover and cook until chicken reaches 165°F (18–20 minutes).
  4. Remove chicken to shred once cooled. Return pot to simmer; add rinsed lentils and cook until tender (15–20 minutes).
  5. Stir in shredded chicken and fresh herbs; adjust seasoning as needed.
  6. Serve hot with reserved caramelized onions on top and lemon wedges on the side.
