  • 1 pound Atlantic salmon, skinned and chopped
  • 2 scallions, finely chopped
  • 1 jalapeño pepper, finely diced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon soy sauce
  • 1 cup panko breadcrumbs
  • ½ cup mayonnaise
  • 1 tablespoon pickled ginger
  • 1 teaspoon wasabi

Instructions

  1. Prepare the wasabi mayo by mixing mayonnaise, pickled ginger, and wasabi in a small bowl. Refrigerate until ready to use.
  2. In a medium bowl, combine salmon, scallions, jalapeño, ginger, soy sauce, and panko breadcrumbs. Mix by hand until well combined.
  3. Form the mixture into either four 8-ounce burgers or eight 4-ounce sliders. Place on parchment-lined baking sheet and refrigerate for at least 30 minutes.
  4. Preheat your grill to 450°F. Cook sliders for about 5 minutes (2½ minutes per side) and burgers for about 6 minutes (3 minutes per side), or until cooked through.
  5. Serve on buns with curly lettuce and topped with wasabi mayo.
