  • 2 medium zucchinis, sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tbsp olive oil
  • dried Italian herbs
  • salt
  • pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. In a skillet over medium heat, add olive oil and sauté chopped onion and minced garlic until fragrant (about 2 minutes).
  3. Add ground turkey to the skillet, cooking until browned while breaking it up with a spoon (about 5-6 minutes).
  4. Stir in diced tomatoes, Italian herbs, salt, and pepper; simmer for 3-4 minutes.
  5. In the prepared baking dish, layer half of the zucchini slices followed by half of the turkey mixture and half of the mozzarella cheese. Repeat these layers.
  6. Bake uncovered for 30-35 minutes until bubbly and golden on top. Allow cooling for about 5 minutes before serving.
