  • 2 lbs ground chicken
  • 4 garlic cloves, minced
  • 1/2 onion, finely diced
  • 12 jalapeno peppers, seeded and finely diced
  • 2 teaspoons paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 3/4 cup shredded pepper jack cheese
  • 1/2 cup chopped fresh cilantro
  • Vegetable or olive oil
  • 8 slices of cheese optional
  • 8 hamburger buns
  • 1 head of roasted garlic
  • 1/3 cup mayonnaise
  • 2 large avocados
  • Juice of 1 lime
  • 2 tablespoons cilantro, finely chopped

Instructions

  1. Prepare the roasted garlic mayo by mixing roasted garlic with mayonnaise; season with salt and pepper and refrigerate.
  2. Preheat your grill to medium-high heat.
  3. In a mixing bowl, combine ground chicken, minced garlic, onion, jalapenos, paprika, salt, pepper, shredded cheese, and cilantro gently until just mixed.
  4. Form the mixture into 8 equal patties.
  5. Lightly oil the grill grate using a paper towel dipped in vegetable oil.
  6. Grill the patties for about 8 minutes per side or until they reach an internal temperature of 165°F; add cheese slices in the last few minutes if desired.
  7. Assemble on toasted buns and top with roasted garlic mayo and guacamole.
