  • 16 oz mini farfalle pasta
  • 23 boneless, skinless chicken breasts
  • 1 teaspoon lemon zest
  • 3 tablespoons olive oil
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 4 tablespoons butter
  • ¼ cup fresh lemon juice
  • 1 cup freshly grated parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in salted boiling water according to package directions until al dente. Drain and set aside.
  2. Season chicken with salt, pepper, lemon zest, garlic powder, Italian seasoning, and onion powder. In a skillet, heat olive oil over medium-high heat and cook chicken until golden brown (3–5 minutes per side). Transfer to a plate.
  3. In the same skillet, add remaining olive oil and sauté zucchini and yellow squash for about 2 minutes. Add minced garlic and cook for another 30 seconds.
  4. Combine cooked pasta with vegetables in the skillet along with butter and lemon juice; toss until butter melts.
  5. Slice chicken and return it to the skillet; stir to combine.
  6. Garnish with parsley and extra parmesan before serving.
