  • 1/2 cup (30 g) sun-dried tomatoes, sliced
  • 1 teaspoon fresh thyme
  • 2 cans (14 oz / 400 g) chickpeas, drained and rinsed
  • 1 cup (200 ml) vegetable stock
  • 1 cup (200 ml) coconut milk
  • 68 fresh basil leaves, roughly shredded
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat and sauté garlic until fragrant (about 1-2 minutes).
  2. Add Italian seasoning and cook for another minute.
  3. Stir in tomato paste to create a rich base.
  4. Incorporate chickpeas, sun-dried tomatoes, thyme, and vegetable stock; bring to a simmer for about 5 minutes.
  5. Mix in coconut milk and fresh basil; simmer for an additional minute.
