  • 4 cups corn (frozen or fresh)
  • 1 tablespoon olive oil
  • 1 red bell pepper (diced)
  • 1 bunch fresh cilantro (minced)
  • 1 jalapeno (diced)
  • 1/2 large red onion (diced)
  • 2/3 cup cotija cheese (crumbled)
  • Dressing: sour cream
  • mayonnaise
  • lime juice
  • cumin
  • paprika
  • salt
  • chili powder

Instructions

  1. Heat olive oil in a sauté pan over medium-high heat. Add corn and jalapeno; cook until slightly charred (7-10 minutes). Transfer to a large bowl.
  2. In the same bowl, mix charred corn with red pepper, onion, and cilantro.
  3. In a separate bowl, whisk together sour cream, mayonnaise, lime juice, cumin, paprika, salt, and chili powder until smooth.
  4. Pour dressing over the corn mixture; stir to coat evenly. Add half the cotija cheese and mix well.
  5. Top with remaining cotija cheese and additional cilantro for garnish.
  6. Serve chilled or at room temperature.
